Vanillin sugar is not the same as vanilla sugar. Vanillin (contained in nature in a proportion of 1.5-4% in the vanilla fruit, popularly known as "vanilla stick") is obtained, with great pleasure by the industry, artificially, as a by-product of the wood processing industry. Once vanillin is added to regular sugar, it becomes vanillin sugar. Cheap and perfect for all the concerns that sell ingredients to the consumer who is fooled, because he is uninformed and buys what is offered to him on the shelf. Even within vanillin, one can distinguish between the "identically natural" quality and the (sub-pathetic) quality called ethylvanillin, obtained through a multitude of chemical processes.
